Pressure Cooking for Fresh, Fast Healthy Meals

I am a mom of two little girls – ages 1 & 2 – and I work full-time ++ in advertising – so I don’t have a lot of extra time. My passion for years has been eating yummy food. Good food of any kind… elegant or comfort…. expensive or the best budget meal… traditional American (I was born and raised outside of Philly) or ethnic (as I am Indian by decent and love exotic food and flavors).

I bought an electric pressure cooker after I got married few years ago because I love kitchen gadgets. I christened it with my first pot roast – which my dinner guests raved about. Since it was so easy to make – my husband, Andrew, and I hosted dinner parties quite often with lots of red wine and a pot roast. In between, I cooked lovely meals for two using new recipes that I would find…I was the perfect new wife.

Then I had my first baby, Annika. The daily meals became fewer and the priority be came her meals… the clock moved forward and the second baby, Liliana, arrived – just 13 months later and I went back to work as an advertising account executive.

I still wanted to feed my husband and family with fresh, healthy, delicious food… but time was my enemy until I remembered the pressure cooker that I had not broken out since my last dinner party – somewhere in between baby 1 & 2.

I have now started experimenting with this wonderful device and have been creating meals for my family – often in the time it take to change out of my work clothes.

This is my story, my journey, my need to create a vault of fabulous meals for my family, for my kids, for my friends in the limited time that I have…. and I want to share it with other busy moms, dads, singles, and people who like to entertain. I hope you enjoy!
